Grandpa's bread. Russet potatoes riced hot, enriched with cream and butter, chilled overnight, then rolled paper-thin on a floured cloth and cooked on a dry griddle at high heat until pale with light brown freckles. Served the old way — buttered, sprinkled with cinnamon sugar, and rolled up.
